Ribs...

OK, so it has been awhile since the last posting. I thought about several things but for now, it's ribs.

One of the things that I am trying to do is find the correct way to cook - smoke ribs. The Fabulous Fall Fun Fest was last weekend and I got the chance to talk to several of the participants in the Cookeville CookOff.

I thought initially that there was an involved process that you had to go through to get to that level of competing. I found out that all you have to do is pay the entry fee and be there on time.

All the rest, the signs, the big smokers, the fancy rigs, the campers... are just the accoutrements that people like to have to go to these cook offs. I saw everything from huge RVs with stainless steel smokers and heat control devises on big trailers to small smokers with people sitting under one of those portable tents. The winner of the cook off was someone with equipment in between those two types.

So, now what... First, I have to start perfecting the 4 items that need to be entered. They are ribs, beef brisket, pork butt and chicken. I think I can do chicken, so now its on to ribs.

So, over the next time frame, whenever I give someone some ribs to taste, you have to smile and say... "mmm, good".

When describing the taste of ribs, you can't mention the word - paprika.

Good comment, Mary! Actually, Lee, you need to say, "That's true...thank you." Right?? But don't you want honest feedback if they think "it was better last time", or whatever?
